Avocado ice cream

For 2-3 servings, you’ll need

  • 1 ripe avocado
  • 150 ml coconut milk
  • 50 ml maple syrup
  • 1 lime juice
  • A pinch of salt

Here’s how:

  1. Cut the avocados in half and remove the pit. Blend the flesh with the maple syrup and lime juice. Stir in the coconut milk and salt.
  2. Mix the avocado mixture thoroughly and freeze in a freezer-safe container for at least four hours.

Chocolate ice cream with sweet potatoes

For 6 people you’ll need

  • 250g sweet potatoes
  • 4 tablespoons agave nectar
  • 100 g dates
  • 350 ml coconut milk
  • 25 g cocoa powder
  • 1 tablespoon vanilla extract
  • 1 tablespoon instant coffee (optional)
  • Pinch of sea salt

Here’s how:

  1. Bake the sweet potatoes in the oven (about 45 minutes) or in the microwave until soft. You should end up with 250g of soft yams.
  2. Soak the dates in hot water for about 10 minutes.
  3. Place all the remaining ingredients with the sweet potato in a blender and blend until smooth.
  4. Line a loaf pan with parchment paper, pour in the mixture, cover with a cloth and place in the freezer.
  5. Freeze for at least 4 hours, ideally overnight, and thaw for about 15 minutes before serving

For 2 people you’ll need

  • 4 oranges
  • 1 ½ tablespoons coconut milk
  • 2 tablespoons agave nectar
  • A small handful of pistachios
  • A few mint leaves

Here’s how:

  1. Peel and freeze the oranges for a few hours or overnight.
  2. Mix the coconut milk and agave nectar together and chop the pistachios.
  3. Just before serving, remove the oranges from the freezer and grate them with a grater.
  4. Drizzle the grated oranges with the coconut agave syrup.
  5. Garnish with pistachios and mint leaves.

Coconut lemon ice cream

You’ll need for 6 servings

  • 6 lemons
  • 1 can coconut milk
  • 4 tablespoons agave nectar
  • 4 tablespoons lemon juice
  • A handful of mint leaves

Here’s how:

  1. Fill ice cube trays with coconut milk and freeze for a few hours.
  2. Trim the bottoms of all 6 lemons, cut about ¼ of a lemon for the lid, and set both ends aside.
  3. Hollow out all 6 lemons. Remove the flesh from 2 lemons, chop and freeze. Squeeze the juice from the other 4 lemons and save for later.
  4. Place the cut bottom of each lemon inside the lemon to close any holes, then place the lemons in the freezer for at least 1 hour.
  5. Combine frozen coconut milk cubes, lemon wedges, lemon juice and agave nectar in a blender to make ice cream.
  6. Spoon ice cream into frozen lemon bowls, seal with lids, and garnish with a mint leaf.

For the basic sorbet recipe, you’ll need:

  • 200 ml water
  • 60 ml maple syrup or agave nectar
  • 60 g sugar
  • About 200 grams of fruit of your choice (e.g., strawberries, lemons, raspberries, mango, etc.)

Here’s how to make sorbet:

  1. Start by chopping your fruit (squeeze the lemons for lemon sorbet) and blend it well.
  2. Put the blended fruit in a pot and cook it with water, maple syrup/agave nectar, and sugar until the sugar is completely dissolved. Then, let the mixture cool completely.
  3. Pour the mixture into a freezer-safe container.
  4. Let your sorbet freeze in the freezer for about 5 hours, but be sure to stir vigorously every hour to prevent large ice crystals from forming.

For the frozen grape snack, you’ll need:

  • 1 plate full of grapes
  • 2 tbsp sugar
  • Juice of ½ lime
  • Optional: crushed chili flakes
  • Optional: spirulina powder

Here’s how it works:

  1. Wash and dry the grapes.
  2. Distribute lime juice and sugar over the grapes.
  3. Divide into 3 separate bowls. Add chili flakes to one and spirulina powder to another.
  4. Roll the grapes in the mixtures.
  5. Place everything in a freezer-safe bowl and freeze for about 8 hours.
