Grilling vegetables

We have a wide selection of delicious vegetables that can be perfectly prepared on the grill. Bell peppers, zucchini, eggplants, tomatoes, mushrooms – the list is endless! Slice or dice them, spray with some olive oil and your choice of spices and grill away. The vegetables will get a wonderful, charred flavor and make a delicious side dish or even a main course.

Grilled cabbage steaks

How about grilled cabbage steaks for your next BBQ night? Here’s what you’ll need:

Esbit BBQ grilled white cabbage steaks
  • 1 cabbage
  • 3 tbsp olive oil
  • 3 tbsp agave syrup
  • 2 tsp smoked paprika powder
  • 2 tbsp soy sauce

Instructions:

  1. Cut the cabbage into approximately 2 cm thick slices.
  2. Mix olive oil, agave syrup, smoked paprika powder, and soy sauce to create the marinade.
  3. Brush both sides of the cabbage steaks with the marinade.
  4. Grill for about 5-10 minutes per side (grilling time may vary depending on the grill type).
  5. Optionally, top with (vegan) yogurt dip.

Grilled cauliflower skewers

You can prepare and grill almost any vegetable. Vegetable skewers are also a great idea for the grill, like grilled cauliflower skewers:

You’ll need:

  • 400 g cauliflower
  • 30 g cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp white wine vinegar
  • 4 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tsp sriracha sauce
  • 100 g spring onions
  • Salt
  • Freshly ground pepper

Instructions:

  1. Divide the cauliflower into florets and place them in a freezer bag.
  2. Mix 10 g cornstarch with 1 tbsp soy sauce, 2 tbsp sesame oil, salt, and pepper, and add it to the cauliflower in the freezer bag. Mix everything well and marinate the cauliflower for at least 30 minutes (preferably overnight).
  3. Thread the marinated cauliflower onto skewers and place them on the grill until they become crispy and brown.
  4. Meanwhile, prepare another sauce by mixing the remaining 20 g cornstarch, 1 tbsp soy sauce, 1 tbsp white wine vinegar, 2 tbsp sesame oil, maple syrup, sriracha sauce, salt, and pepper. Pour this sauce over the hot cauliflower on the grill and grill for a few more minutes.
  5. Garnish the cauliflower with thinly sliced spring onions before serving.

Colorful rainbow vegetable skewers

When it comes to grilled vegetables or fruits, there are no limits to creativity. Another tasty and really simple recipe is the colorful rainbow vegetable skewers. You can use almost any vegetable for this recipe, and it’s also visually appealing.

Or how about a fruity grill skewer variation? Nectarine skewers with burrata taste delicious and refreshingly fruity.

Grilled avocado

Have you ever grilled avocado? No? Give it a try next time! For some variety, you can fill your grilled avocado with a tomato salad. Super fresh and delicious!

Vegan sides for the outdoor BBQ party

Of course, sides like corn on the cob, baked potatoes, or grilled bread should not be missing. They complement the main dishes perfectly and ensure a diverse BBQ party. Some special vegan sides like the following will make your BBQ buffet perfect.

Fruity chickpea salad

For your BBQ party, a fruity chickpea salad with melon and nectarine is the perfect side dish:

You’ll need:

  • 230 g chickpeas (canned)
  • 2 cluster tomatoes
  • 1/2 cucumber
  • 1/2 cantaloupe melon (or a small one)
  • 2 nectarines
  • 1 red onion
  • 1 chicory
  • 3 tbsp tahini
  • 1 tbsp agave syrup
  • Juice of 1/2 lemon
  • 3 tbsp water
  • 2 tbsp soy sauce
  • Salt
  • Freshly ground pepper

Instructions:

  1. Cut tomatoes, cucumber, melon, nectarines, onion, and chicory into small pieces.
  2. Mix tahini, agave syrup, juice of half a lemon, water, soy sauce, a pinch of salt, and pepper to create a smooth dressing.
  3. Drain the chickpeas and place them in a bowl together with the cut vegetables and fruits. Mix everything well and add the dressing.

Spicy cucumber salad

Another side dish that fits perfectly is this spicy cucumber salad with a twist:

You’ll need:

  • 4 mini cucumbers
  • 1.5 tsp salt
  • 1/2 garlic clove, chopped
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • 1 tsp chili flakes
  • 1 tbsp agave syrup

Instructions:

  1. Place chopsticks on both sides of the cucumber and cut straight until you meet resistance. Then turn the cucumber and cut at a 45-degree angle.
  2. Salt the cucumbers and let them sit for 5 minutes. Then rinse them with cold water and pat them dry.
  3. Add all the remaining ingredients to the cucumbers and mix everything.

Arugula salad with grilled peaches

Grilled fruits are also a great addition to summer salads. How about arugula salad with grilled peaches, for example?

You’ll need:

  • 2 peaches
  • 100 g arugula
  • 1 avocado
  • 2 tomatoes
  • 1 lemon
  • 50 g coconut chips
  • 50 g cashews
  • 2 tsp olive oil
  • 3 tsp maple syrup
  • 1 tsp soy sauce
  • 2 tsp paprika powder
  • Salt
  • Freshly ground pepper

Instructions:

  1. Preheat the oven to 180°C. For the roasted coconut chips, mix paprika powder with olive oil, 2 tsp maple syrup, soy sauce, salt, and pepper, and coat the coconut chips with the mixture. Place the coconut chips on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes.
  2. For the dressing, soak the cashews in cold water for about 15 minutes, then finely puree them in a blender. Mix the cashew puree with the juice of the lemon, 1 tsp maple syrup, and a bit of salt.
  3. Halve and pit the peaches, brush the surfaces with olive oil, and then fry the peach halves in a grill pan.
  4. Remove the pit from the avocado and slice it along with the tomatoes. Arrange them on a bed of arugula, add the grilled peaches, and drizzle with the dressing. Serve topped with the coconut chips.

A little dessert, anyone?

Why not prepare the dessert on the grill as well? There should always be room for desserts, and yes, desserts can also be prepared on the grill! How about grilled fruits like pineapple or nectarines? Served with some vegan ice cream or chocolate sauce, they are a true delight.
