The last warm days of late summer are meeting the first cool evenings, and the golden autumn is slowly announcing its arrival. It is the perfect time to be out and about and to refuel with something warm during a break. Our autumnal minestrone recipe with pumpkin, colorful vegetables, white beans, and small tortellini is wonderful to prepare in advance, take along in an Esbit food jug, and enjoy while on the move.

Autumnal minestrone recipe with small tortellini
Classic minestrone can always be re-imagined depending on the season and personal taste. For our autumn variation, we combine pumpkin and other vegetables with white beans and small tortellini. Rosemary and thyme give a spicy note.
The result is a filling soup that tastes especially good after the first few kilometers on the trail, during a break by the lake or on an autumnal picnic.
Ingredients for approx. 2 servings
- 150 g Hokkaido pumpkin
- 2 small carrots
- 1 small zucchini
- 1 small onion
- 1 clove of garlic
- 100 g white beans, cooked
- 100 g small tortellini
- 300 g chopped tomatoes
- approx. 300 ml vegetable broth
- 1 tbsp olive oil
- 1 sprig of rosemary
- 1 sprig of thyme
- Salt and pepper
- optional: some fresh parsley
How to prepare the minestrone
Cut the pumpkin, carrot and zucchini into small, bite-sized pieces. Finely chop the onion and garlic.
Heat olive oil in a pot and briefly sauté the onion and garlic. Add the pumpkin and carrot and cook for a few minutes.
Then add the chopped tomatoes and the vegetable broth. Add the rosemary and thyme and let the soup simmer for about 10 minutes over medium heat.
Add the zucchini and the small tortellini and continue to simmer until the tortellini are cooked. Shortly before the end of the cooking time, stir in the white beans and heat the minestrone through once more.
Remove the rosemary and thyme and season the soup with salt and pepper. If you like, sprinkle with some fresh parsley at the end.

From the cooking pot directly outdoors
If you want to enjoy your minestrone later while on the go, you can preheat your food jug with hot water before filling it. Then pour out the water and fill it with the freshly cooked, hot minestrone. Our tip: Small tortellini and finely chopped vegetables are particularly suitable for taking along in a food jug. This way, the minestrone is easy to spoon out later without having to cut up vegetables or pasta first. Especially on the first cool autumn days, a really nice warm refreshment will be waiting for you during your next break.
